Safe cold process: hygiene rules before, during and after production

Cold process means fewer risky steps: no heating followed by slow cooling. But precisely because nothing is heated, hygiene becomes essential.

Before you start

  • Clean hands, hair covered.
  • Containers, mixer and machine washed and sanitised.
  • UHT milk and cream straight from the fridge (4–5 °C).
  • Sachets undamaged and dry.

During production

  • Never leave the mix open or at room temperature.
  • Don’t add ingredients outside the recipe.
  • Small space? Separate by time: produce first, wash the tools afterwards.

After production

  • Store quickly and label.
  • Wash the tools straight away.
  • Strange smell, colour or texture? Don’t sell it.
