Gelato freezer temperatures: −22 °C, −18 °C and a display at about −15 °C
Good gelato can be ruined in the wrong freezer. Remember these three temperatures.
- −22 °C: the main storage freezer. Also used to harden gelato straight out of the machine.
- −18 °C: an in-between freezer for the night or for nearly empty pans, so the gelato is ready to sell the next morning without waiting.
- About −15 °C: the display temperature. Too cold and the tongue cannot read the flavour. Too warm and the texture is ruined.
Labels and FIFO
Label every pan: flavour, production date and batch number. Use FIFO (first in, first out): older pans go out first.
Never let gelato go up and down in temperature. Gelato that melts and refreezes turns icy.
