Top ice: chill for 2 hours before whipping
The secret of a tall, fluffy no-machine ice cream: the mix must be very cold before whipping.
- Mix the Top ice powder with cold water until even.
- Put it in the freezer for 2 hours, until very cold (not frozen).
- Whip with a mixer for 5–7 minutes: it rises like whipped cream.
- Spoon into cups, then freeze for at least 5 hours.
With just cold water and no 2 hours in the freezer, the mix rises much less.
